Our Pastourelle cuvée is a rosé of pure pleasure—tender and generous. Crafted by the GODEAU family at Caves du Père Auguste, this wine reflects the convivial spirit of Touraine. This medium-dry rosé (neither fully dry nor overly sweet) focuses entirely on fruit and freshness, offering a luscious alternative to traditional dry rosés.

Appearance: A magnificent salmon-pink robe, clear and brilliant, an immediate invitation to taste.

Nose: A true basket of fresh red fruits! You will find intense aromas of wild strawberry and raspberry, with a small note of pear drop candy that adds immense charm.

How is rosé wine produced from red grape varieties?
It is a question many enthusiasts ask: how can a black-skinned grape variety, such as Gamay or Cabernet, produce a wine with such a light and delicate hue? At Caves du Père Auguste, we cultivate this art of pressing to offer fresh rosés and surprising “Blancs de Noirs.”
The secret is in the skin (not the juice)
The first thing to know in oenology is that almost all grape varieties have colorless pulp and juice. The color of a red wine comes exclusively from the pigments (anthocyanins) contained in the grape skin.
To make a red wine, the juice is macerated with the skins for several days. For rosé, it is all a matter of timing and delicacy.
The direct pressing technique: freshness and lightness
Thanks to the immediate proximity of our plots to the estate’s winery, our freshly harvested grapes are pressed very quickly after the harvest.

Limited contact: By pressing the grapes as soon as they arrive, the contact time between the clear juice and the colored skins is extremely short.

The hue: This short window is enough to diffuse a light pink tint, ranging from rose petal to salmon.

The structure: Since maceration is virtually non-existent, we do not extract tannins. This results in a lively, fruity wine without the bitterness or robust structure of a red wine.
Vinification similar to white wines
Once the rosé juice is obtained, the alcoholic fermentation follows the same protocol as for our white wines.
We maintain cool and constant temperatures (generally between 16°C and 18°C) to enhance the aromas of small red fruits (strawberry, raspberry) and flowers. This method guarantees the vibrancy and aromatic tension that you appreciate in our Touraine cuvées.
The exception: The “Blanc de Noirs”
Did you know it is possible to make a perfectly white wine from red grapes? This is what we call a Blanc de Noirs.
At Père Auguste, we achieve this through constant vigilance at every step:

Hand-harvesting in crates: To prevent the berries from crushing under their own weight and coloring the juice prematurely.

Extremely gentle pressing: We extract the heart of the juice without bruising the skin.

Result: A white wine of great complexity, possessing the structure and aromatic power of a black grape variety, but with the appearance and freshness of a fine white wine.
