Cultivated on our lands in Civray-de-Touraine, this cuvée is distinguished by its directness and precision. Unlike our Damoiselle cuvée, this wine is vinified to express the full vibrancy and minerality of the variety, offering a taut and elegant sensory experience.

Appearance: A pale yellow robe with green highlights, brilliant and clear.

Nose: A complex bouquet that opens with notes of citrus (yellow lemon, grapefruit) and white flowers, before giving way to a minerality typical of the tuffeau limestone terroir.

Palate: The attack is lively and sharp. It reveals a beautiful substance supported by a fine acidity that stretches the wine. The finish is saline and persistent, leaving a sensation of great purity. A dry white wine of character, without compromise.

White Winemaking: The Art of Preserving the Fruit’s Brilliance
Crafting a great white wine is an exercise in style that requires delicacy and constant protection against oxidation. At Domaine du Père Auguste, every stage of vinification is designed to extract the quintessence of our grape varieties, such as Sauvignon or Chenin, and to offer wines of great purity.
Extracting the juice: the essential separation
Unlike red wines, white wine vinification begins with the immediate separation of solids and liquids.

Pressing: Upon arrival at the winery, the grapes are pressed to separate the juice (the must) from the skins, seeds, and stems.

Why is this step crucial? The skin of white grapes contains compounds that, if macerated for too long, can impart bitter vegetal tastes or unwanted astringency. Our goal is to obtain the clearest and purest juice possible.
Alcoholic fermentation under close surveillance
Once the juice is clarified (a step called settling or débourbage), the transformation begins. Yeasts, naturally present on the grape skins or selected for their aromatic profile, go to work.
The key factor in this stage is temperature control. At the Estate, we maintain our vats between 16°C and 18°C. This “cold” fermentation is slower, but it is essential for:

Avoiding the production of heavy aromatic compounds.
Aging: sculpting the wine’s personality
Once fermentation is complete, the wine is not yet ready for bottling. The winemaker then enters a phase of reflection: aging (élevage). Depending on the cuvée and the desired profile, several paths are available to us:

Stainless steel vat aging: To maximize tension, minerality, and crisp fruit.

Fine lees aging: As we have seen, this brings body, creaminess, and natural protection to the wine.

Oak barrel aging: To provide complexity, woody or vanilla notes, and a richer structure.
Each of these choices is guided by a single ambition: to ensure that, during the tasting, you find the full expression of our terroir and the passion of our craft.
