The Strength and Heritage of Touraine Malbec Discover our Les Marreux cuvée, a red wine with character made from the Côt grape variety (the ancestral name for Malbec in the Loire Valley). This grape, cherished by our ancestors, finds a unique expression on our estate. Located just 2 km from the Château de Chenonceau, we craft this wine for lovers of structured, authentic, and deep red wines.


Tasting Notes

  • Appearance: A deep and intense robe with purple and violet highlights, characteristic of the great Touraine Côt wines.

  • Nose: A powerful and luscious bouquet of black fruits (blackberry, blackcurrant) enhanced by delicate notes of violet and occasionally a hint of sweet spices.

  • Palate: A bold attack with great body. The tannins are present yet silky, offering a solid structure that coats the palate. It reveals the generosity of black fruit with a persistent, slightly licorice finish.

This cuvée is the result of precision work both in the vineyard and the cellar:

  • Grape Variety: 100% Côt (Malbec).

  • Terroir: Clay-limestone plots rich in flint (silex), benefiting from optimal exposure for perfect grape ripeness.

  • Sustainable Farming: HVE (High Environmental Value) certified. We prioritize soil health to extract the quintessence of the grape variety.

  • Vinification: Traditional with controlled maceration to extract color and aromas while maintaining suppleness.

The Côt “Les Marreux” is a gastronomic wine that pairs best with flavorful dishes:

  • Meats: A beautiful grilled rib of beef, a leg of lamb with herbs, or feathered game.

  • Local Specialties: Ideal with regional delicacies such as Rillettes de Tours PGI or traditional “petit salé” with lentils.

Temperature control: the art of sculpting the profiles of our wines

At every stage of crafting our cuvées, temperature acts as the conductor of quality. From the vineyard to bottling, we pay meticulous attention to thermal control to reveal the quintessence of our terroir.

Preserving freshness from the harvest

It all begins during the harvest. Once picked, grapes are sensitive to oxidation and thermal fluctuations. Protecting the berries from high heat is our absolute priority: this prevents spontaneous and uncontrolled fermentation. By keeping the grapes cool upon arrival at the winery, we preserve the integrity of the fruit and the purity of the primary aromas.

White and Rosé Wines: the quest for aromatic elegance

For our white and rosé wines, winemaking is an exercise in precision. Alcoholic fermentation must take place slowly and at low temperatures.

  • The objective: To never exceed 16°C to 20°C.

  • The result: This coolness preserves the grape’s volatile compounds. This is how we achieve those subtle notes of citrus, white flowers, and fresh fruit, while avoiding heavy or undesirable aromas that could mask the wine’s finesse.

Red Wines: extracting structure and color

For the vinification of red wines, the approach is radically different. Here, heat is a precious ally for extraction.

By increasing the vat temperature (often around 25°C-30°C), we promote the diffusion of polyphenols found in the grape skins. This process is essential to:

  • Achieve a deep and intense color.

  • Refine the tannins so they are rounder and silkier on the palate.

  • Develop a robust structure and the aromatic complexity characteristic of our wines meant for aging.

Technology serving the terroir: our temperature-controlled vats

The secret to this precision lies in our state-of-the-art equipment. Our winery is equipped with the latest generation of temperature-controlled vats.

This system allows us to manage, to the exact degree, every phase of the wine’s life:

  1. Alcoholic fermentation: For a steady and controlled sugar transformation.

  2. Malolactic fermentation: To encourage the work of lactic acid bacteria in a stable environment.

  3. Wine aging: To guarantee optimal preservation by avoiding thermal shocks that could alter the quality of the wine before bottling.
