“Dry and fruity”
Grape variety: Cabernet Franc & Grolleau
Dress: The color is clear, salmon pink with orange tendencies.
Nose: The nose is clean with a nice intensity where we mainly find fruity aromas (ripe cherry, cooked cherry, plum, blood orange, orange paste).
Mouth: After a supple attack on the palate, the fruity sensations quickly reappear. The heart of the mouth is very round. The finish is long with aromas of blood orange and mirabelle plum.
Recommended dishes: Barbecue, local cold cuts, pizzas
Tasting temperature: 7°C
Aging potential: < 3 years

What’s a saignée ?

Between maceration for reds and direct pressing, there is a compromise for black grapes:
Once maceration has started, we can always carry out bleeding. The operation consists of taking juice out very shortly after the start of maceration, the color extraction having already begun, the extracted juice is a dark pink.
This action allowed us to concentrate our red wines in color and tannins while we can use bleeding to intensify the color of our rosés!
